Homemade Raw Sauerkraut

Raw fermented foods are your friend, but most fermented foods you find at the store have been pasteurized killing off all naturally occurring probiotics. The great news is that the healthier grocery stores do carry raw versions of sauerkraut and kimchi or even better you can make it yourself for pennies.

Our microbiome the world which lives and dies in our gut plays a major role in our overall health and mental state. The more it is studied, the more it proves to behave as our second brain. Fermented foods also help in healing GAPS and GAPS is worth knowing more about so please investigate!

I was at the community market recently and purchased two heads of napa cabbage for a dollar apiece an amazing bargain and now owning them removed any excuse from me finally making my first batch of raw sauerkraut.

Very important to the raw fermenting process is avoiding introducing bacteria to it or leaving air to feed it. Therefore use boiling water to clean the jar or jars, bowl and any tools you will use for this. Also, ensure that when filling the jars that no air remains in the jar. Remember this is Not canning, we are not cooking anything this is a raw fermentation.

Pull the outside leaves off of the cabbage and set aside a couple of clean, big ones. You may use almost any type of cabbage or vegetable for fermentation. Slice the cabbage as thin as you like and place into your bowl. Add two teaspoons of Real Salt or sea salt, that prevents the growth of pathogenic bacteria, and begin messaging. Your hands will get a great workout and as the seconds pass you will notice the bowl begin to fill with cabbage juice as it releases its water.

After a matter of only a few minutes, your work in the bowl will be complete. Begin to fill your jar with the cabbage packing it down every inch or two to ensure the removal of all air until close to the top. At this point place a leaf or two over the top of the shreds and ensure that the jar is filled to the top with its juices or add clean salted spring water or fresh celery juice until full.

Now it is only a matter of allowing nature to work its magic. You have created the environment suitable for fermentation; it just needs to be given three to four days without any sunlight in a steady 70-80 degrees Fahrenheit world to thrive.

Open your jar and smell the tang of fermentation, enjoy the fruits of your labor and then refrigerate the rest to slow down the process and enjoy as you will. As long as the brine stays above the cabbage, it will keep for a very long time in there. Should not be a concern because once you start enjoying it it likely won’t last too long.

Enjoyed mine most with fresh tomatoes.

I recently learned of a situation where neighbors “share” a dog. One has children with parents working, so the dog stays with its second family a retired couple next door during the day. So the dog benefits from all the companionship as do both families! Something to consider if you leave your pup home alone all day or know someone who does. God Food

Many of us grew up in a home where meals came from a drive through or out of a box, bag, can or container. Therefore, today fresh vegetables often do not reside at the top of our list of things we crave to eat. Fat, salt, and sugar are at the top of that list because that is how we are hardwired. Understand that at the time of our wiring we did not have a drive through on every corner or grocery stores filled to the brim with fake foods.

All processed carbohydrates (buns, coatings, fries) behave like sugar in our brains making fast food, and most processed foods hit on all three cylinders and then there’s the copious MSG added. Examining the Standard American Diet the vegetable we most consume are potatoes, fried potatoes. All supported by the amount of fast and restaurant foods we eat. Although potatoes do offer some nutrition when baked, the sweet potato has more to offer us nutrition wise.

Growing up, my idea of a vegetable outside of potatoes was green beans or spinach fresh out of the can. Iceberg lettuce tomatoes and cucumber would make an appearance on the occasional spaghetti night. It was not until I learned about holistic health did I come to realize how many vegetables support health and help keep disease away.

Organic vegetables are full of vitamins, minerals, enzymes and antioxidants all to support our wellness. I refer to vegetables as God food or food that loves you back. Foods created by God trump foods made by man every time!

The easiest way to fill yourself with more veggies is either to fill your blender half full with greens and then make a smoothie. Many favor young beet, chard & kale greens or spinach. Add frozen bananas, berries, almond milk or coconut water, maybe ground flax, chia or hemp hearts and you’re all set.

You can also finely dice up zucchini, yellow squash, carrots or use the food processor and add them to any meat or non-meat sauces, loafs, meatballs or patties. Invest $30 in a spiralizer and use zucchini or squash in place of pasta and don’t forget spaghetti squash for another way to sneak more veggies onto the dinner table.

Organic vegetables feed our bodies and mind better than anything you can get from a drive-through, box, bag, can or container. If the vegetables are raw, then all the enzymes are in play. If you’re only into sharing your love with those that love you back, then become more familiar with a true love, vegetables.

Holistic Wellness often requires Patience

Holistic Medicine is considered by many to be hokey or new-age, feel-good, hogwash. I was this way once. If facts are an important thing to folks may they realize that what they are blowing off is Original effective medicine. Found today under the terms Holistic Medicine, Homeopathy, Folk Medicine, Unconventional Medicine, and Unorthodox Medicine it allows the body to heal itself as it was intended to do, once given the opportunity.

The schlock the doc throws at you from his buddies at GSK or Merck is almost always toxic. Over a hundred thousand people in the US die from those forms of modern medicine they embrace. Properly prescribed and taken dead is a possible side effect, but they keep thinking they need a pill for it.

Outside of trauma care, much of today’s allopathic medicine is only about profit. From the physician and their buddy in the pharmacy comes concoctions that often only suppress symptoms and again, just may kill you. Many times a shift in behaviors and what one consumes will fix what ails you, and no waiting room!

With holistic solutions, we have to wait often for wellness since it takes time for the body to make use of what it is given and then symptoms go for good. We have gotten used to taking a pill to knock out a symptom. Patience comes in very handy when allowing the body to handle healing itself.

For thousands of years, Native Americans, as well as natives from Mexico and Africa, have used living clay to bring about wellness. Healthy Perception

On my way out of town recently I received a call from the property I was staying at asking me what kind of snack I would enjoy. I suggested something healthy like a piece of fruit, water, nuts, etc. When I made it to my room, a gift bag awaited me with a snack. In the note she hopes I enjoy my “healthier” snack.

While I appreciate the companies attempt at doing something nice for a customer they have a bit to learn around nutrition. Artificial flavors, high fructose corn syrup, GMOs, MSG, fried in oil, artificial colors and a few unknowns make up this clump of “healthier” snacks. If I were to serve you these snacks it would be because I did not like you.

I laughed and laughed having it confirm for me once again that many folks perceptions of healthy was nowhere in line with what is. Root beer, BBQ potato chips, and fruit chews don’t quite hit the mark but am guessing the word fruit made her think healthy.

At one time, I too might have thought of anything having the word fruit in it as being healthier. When traveling if one hasn’t brought their own stash of sprouted and raw nuts, fruit, veggies, etc. then it can be hard to grab something healthy if not nearly impossible. At least today most gas stations and convenience stores now carry bananas and some assortment of nuts/seeds and water.

Wheatgrass vs. Crisco and the Art of Misinformation

Heart disease, cancer, and diabetes don’t care in what month you were born. The latest Columbia University report claims the month you were born decides to what disease you’re predisposed. This is a bit hokey. Their figures are probably accurate when it comes to winter and vitamin D deficiencies, but overall it alludes to the idea that we are predisposed to disease, and it is beyond our control.

The recently released John Hopkins study that suggests unlucky people get cancer is laughable. The medical establishment and media will say almost anything to have us believe that it is not within our power to avoid disease. There are few genetic issues we cannot escape, but almost all disease is self-induced.

One of the first things I subscribe to is the belief that, as an adult, whatever we consume is our choice – from food and beverages to information and thoughts. For years, I was oblivious to just how poorly I was supplying my body with nutrients. Day after day I was filling it with toxins and “food” void of almost all nutrition. How it is I am alive and in as good health as I am, is a testament to our body’s ability to endure. Our bodies ability to heal is greater than most of us have been taught.

When it comes to nutritious food, I have a shot wheatgrass juice at one end of the food spectrum and on the opposite end I have a shot of Crisco. Wheatgrass is full of energy, minerals, chlorophyll, and enzymes. It nourishes our bodies and promotes wellness. Crisco, on the other hand, is essentially toxins that can likely only promote illness (hydrogenated GMO soy and palm oils and TBHQ, which is a form of butane).

Choose foods that are closer to wheatgrass than to Crisco. Be aware you are choosing your fate. Your health outcomes are not just some predetermined thing over which you are powerless. By making choices closer to wheatgrass, you can ensure healthier outcomes and less disease.

The first drafts of America’s Declaration of Independence and Constitution were written upon it, Henry Ford built a car from it that was fueled by it, and Washington and Jefferson both grew it. Cultivated for over 10,000 years it was the very first American crop to exceed $1 billion dollars. It made over 25,000 different products including paper, plastics, textiles, paints, oils, food, rope, etc. I am speaking today of hemp, as it is one of our planet’s most amazing plants & this is national hemp week!
HEMP Industrialized hemp is not cannabis (marijuana), and no amount of smoking industrialized hemp can get you high. Prior to 1900, almost all medicines were cannabis-based as it contains proven healing properties. Legalization of many forms of cannabis has spread across the US. Today’s pharmaceuticals are reported to kill an average of one person every 19 minutes. There has never been a single case of death due to cannabis or hemp, except for the times hemp rope was used in hangings.

Government and corporate criminals stole hemp from the American people back in 1937 when they lumped it together with cannabis. Twenty years earlier the government had announced a program to focus on hemp cultivation rather than deforestation. However, folks with tree pulp processing patents, petroleum interests as well as massive tree-filled landowner/paper producers stood to lose a fortune from further embracing hemp. Corporations like Hearst and DuPont profited massively as a result of the Government making all-natural solutions illegal (see product list above) and allowing the patents of countless petrochemical based solutions (rayon, nylon, pharmaceuticals, etc.).

A single acre of hemp produces the same amount of fiber as four acres of trees. A hemp crop can be grown three times in a single year while trees take 10 to 15 years to mature. Hemp requires no pesticides, half the water it takes to grow cotton, and will grow in all fifty states. We have been importing it from Canada, and we look forward to buying it locally sooner rather than later. Hemp is now being grown in America once again as the people regain the right to make the most of a natural and effective resource. The time has come for such a blatant misuse of government power and corporate corruption to cease so that all people will benefit.

All parts of the hemp plant are used: the seed in shell is normally toasted; the center of the seeds or the hearts can be bought whole or in a powder form as protein and as an oil; the fibers of the plant can be made into paper, plastics, textiles, paints, oils, etc. The seeds contain all the essential amino and fatty acids that support optimal health. The seeds contain vitamins and minerals, Omega 3 & 6 Acids, in a perfect ratio of 1:3 to benefit our bodies and minds. Hemp also contains both Super Omegas Stearidonic Acid and Gamma Linolenic Acid, which allows the body easy conversion of all of its Omega 3 & 6 goodness.

If you investigate the facts further, you too will wonder how such a blatant series of lies have been told for so long to the American people. Based on results, hemp will make its way back as will cannabis, to be considered a norm in American society. I look forward to passing organic hemp fields growing as far as the eye can see. If it tastes too good to be true, it’s likely the MSG talking

Many times have I taken a bite of something and think “Wow this is amazingly delicious”! and today I quickly realize it is likely MSG talking. Almost all processed, fast and restaurant foods are laden with it. Since it comes in our food supply in over sixty different names, you would need to keep a cheat sheet with you to avoid it. Preparing food at home with all known ingredients is the only way to skip it consistently.

The folks in our military at the end of the second world war noticed how much tastier the Japanese MRE’s were than Americas and learned all about MSG. In the beginning, they thought they could add an MSG shaker on tables across America like salt and pepper but it never took off. Once food manufacturers knew how it helped drive their sales by tricking consumers into not tasting the negative flavor found in many packaged foods, sales of it took flight. They have been increasing its use and even turned to hiding it under various ingredient names ever since.

What many may not know is that feeding lab rats MSG is the standard protocol to fatten them. Seems rats aren’t regularly overweight, but if you feed them MSG they are guaranteed to become obese. Of course, all food manufacturers and fast or full-service restaurants know this, but MSG also keeps customers loving the food and keeps them from feeling full so that they will consume more and regularly. A simple look at Americas statistics around our growing obesity over the past fifty years proves this out.

Next time you find yourself overwhelmed with taste-joy over something, stop and realize if you’re being duped. Some folks consider this a drugging of the food while others consider it food science. We will all eat whatever we choose, and that is as it should be. At the same time, you have a right to know if they are intentionally flipping switches in your brain to get you to love it and eat more. Diseases are Mostly an Option

For the first 30 plus years of my life Pluto was a planet and then one day in 2006 it was not. We grow up with certain mindsets about foods that sometimes serve us and other times do not. It depends on what you learned and picked up on growing up. For some of us fast food was the norm and for others fresh veggies filling the dinner plate was. One will support illness and the other health.

More often than not our mindset is that if someone upstream of us biologically had a disease we are predisposed to it as well. That is a lie, with few exceptions. When it comes to almost all heart disease, diabetes or cancers the fate of our wellness lies squarely on us and our behaviors. The actions include what and how much we eat and drink, how we think, exposure to toxins, and how we move.

We tend to model our parents behaviors around all these things much as we do our faith and how we handle relationships, careers, etc. So the “It’s in our genes” mentality, for the most part, is simply not true.

Great news to many who are living with the idea that moms or grandmas disease awaits them. Now if they eat, drink, think, expose themselves to toxins, and move as they did, it very well might, but they have the choice to shift those habits and outcomes.

Is your Salt actually worth its Salt?

From way back when salt has been an important part of many cultures and human health. The Egyptians used it to cure meat and fish and the Chinese counted on it as a means of state revenue. Why it was even a means of payment of wages for soldiers long ago and began the term “worth his salt”. Today it is generously added to all processed foods including lunch meats, soups, bread, and dressings.

For many of us salt comes in one particular container and can easily be found in almost every restaurant and kitchen across America. Too bad the salt I am describing has been stripped of all of its minerals we require and has gone through a 1200 degree heating process. Often bleached and processed with aluminum and ferrocyanide, it no longer resembles real salt but has become a Frankensalt.

Many are concerned they will miss out on iodine if not in their salt but the iodine in the salt is actually synthetic and along with the anti-caking agents can easily prevent our bodies from even absorbing it. Iodine is naturally found in baked potatoes, boiled eggs, strawberries, sea veggies, yogurt, shellfish, fish and there are also supplements.

Kosher salt is the exact same but blessed and in larger flakes. Today’s sea salt has often times been through the same process as table salt but not ground down into as fine of pieces and along with the toxins in today’s seas as well as unknown contamination, keeps me from ever suggesting it. Ancient seas located far underground from Pakistan and Utah offer the cleanest best tasting and mineralized salt available today. Himalayan sea salt is pink and full of minerals as is the whiter Real Salt that comes from Utah.

Consumption of salt is something to keep a check on but even much more important is to know that processed and restaurant foods, and fast food places use as much as they can and it is of the lowest quality. When cooking at home consider using a real salt, as nature intended, that works to mineralize and nourish your body.
