What began as a curiosity after trying bbq jackfruit at a place on the square in Denton has turned into a realization that this IS the next big thing in food. I spoke on it briefly in my last blog as it makes an amazing meat replacement.

The jackfruit tree begins to produce fruit after four years and will produce it for up to 100 years. An average tree grows up to forty feet tall and will produce four to eight thousand pounds of fruit per year. The fruit will vary in weight from twenty to eighty pounds each and sometimes exceed two hundred pounds.

Low in calories and high in fiber Jackfruit is rich in vitamins C, Riboflavin, A, B6, and others. Its mineral content is robust as well high in Manganese, Magnesium, Copper, Potassium with smaller amounts of Calcium, Iron, Zinc, Phosphorus, and Selenium.

I have previously only purchased it in a can from the Asian market. Yesterday I went hunting for a fresh one and was rewarded with one just under twenty pounds. The coloring was as I learned correct for a ripe one. However, it was firmer than expected and inside it was much dryer also, so possibly not quite as ripe as I thought.

If you ever feel the need to strengthen your hands buy one like I did. It took a bit longer than anticipated just to make it halfway through the fruit; I will get the other half later. The object is to separate the pods from the fibrous parts and then cull the seed from each pod.

The seeds are very nutritious and edible too. I will be boiling mine tomorrow for twenty minutes and then eaten as a cross between a potato and chestnut. Once out of the water and slightly cooled peel the skin that remains, if any, that protected it while in its pod. Season and nom.

Oh and before you start this adventure know that this fruit secretes a natural latex so oil your knife and hands to ease on cleanup. My large knife suffered a coating of it, and I ran hot water over it to soften the latex and used dry paper towels to remove it.

Also only used one jalapeno, one-third of the onion, half the cilantro and four tablespoons of the rice vinegar. Again there are more recipes online for jackfruit ceviche and most anything else with jackfruit than you can imagine.

I Made a ceviche for dinner tonight and will top it with avocado before serving. Tomorrow night it is pulled jackfruit BBQ style and the rest I may freeze for later. There are hundreds of recipes online, and if you’re looking for a no processed meat substitute that is full of fiber and nutrition this would be a great one!

Get to know Dr. Linus Pauling

With the temperatures finally falling in North Texas well it seems like October now. The pink washing continues with Cancer awareness month rolling on and you deserve to know the truth that solutions to cancer exist just review my previous writings to learn much more.

Over the past one hundred years several thought leaders, Nobel Prize recipients, etc. have shared their views on the truths about cancer and the cancer industry. I would like to introduce you to one of these people who were intelligent beyond my means and to say was well-respected is an understatement.

Dr. Linus Pauling was the only person ever to receive two unshared Nobel Prizes for Chemistry (1954) and also for Peace (1962). Considered by his peers as one of the two greatest scientists of the twentieth century he is also considered the father of molecular biology.

He spent seventy years advancing science on many levels and within several areas including orthomolecular medicine, Vitamin C, genetics, molecular disease, physiology, electronegativity, and others. With the last thirty years of his life focused on peace activism and humanitarian issues and now for a few of the wise man’s quotes.

“By the proper intakes of vitamins and other nutrients and by following a few other healthful practices from youth or middle age on, you can, I believe, extend your life and years of well-being by twenty-five or even thirty-five years.”

“Provided one has the correct level of vitamin, mineral, and nutritional input; the body can overcome the disease.”

Falling into a Mineralized Winter

From pumpkin spiced everything, leaves falling to the ground, to the second round of turkey leftovers from last night, Fall is on its way out once again. Seems like it just got here. Just over three weeks until it is officially Winter for the next three months and most of all I will miss the trees full of green leaves.

I enjoy and appreciate fall colored leaves as much as the next person but then there is this visual absence of life though that is merely an illusion as the tree is just alive as ever going through a process begun long ago. Their naked limbs and branches offer an entirely different view.

This weekend here in North Texas the leaves are beginning to allow captain gravity to honor his commitment and open up my view that in the Summer is one full of green. Where I live is filled with deciduous trees, primarily post oaks, this time of year as they color from green to brown and fall, I miss them.

Before electricity, everyone used wood fires for cooking and warmth. The wood ash was then used in the family garden to mineralize the soil and in the salt and for seasoning once again mineralizing the diet. Trees are full of minerals and today we tend to be under “mineralized” due to this fact & poor diet.

We get most minerals from our water and the real whole foods we consume as well as if we use Real or Himalayan pink salt. Sen Tra Men also offers plant digested minerals from million of years ago and then buried until now. Investigate further and questions, please ask.
