Homemade Raw Sauerkraut

Raw fermented foods are your friend, but most fermented foods you find at the store have been pasteurized killing off all naturally occurring probiotics. The great news is that the healthier grocery stores do carry raw versions of sauerkraut and kimchi or even better you can make it yourself for pennies.

Our microbiome the world which lives and dies in our gut plays a major role in our overall health and mental state. The more it is studied, the more it proves to behave as our second brain. Fermented foods also help in healing GAPS and GAPS is worth knowing more about so please investigate!

I was at the community market recently and purchased two heads of napa cabbage for a dollar apiece an amazing bargain and now owning them removed any excuse from me finally making my first batch of raw sauerkraut.

Very important to the raw fermenting process is avoiding introducing bacteria to it or leaving air to feed it. Therefore use boiling water to clean the jar or jars, bowl and any tools you will use for this. Also, ensure that when filling the jars that no air remains in the jar. Remember this is Not canning, we are not cooking anything this is a raw fermentation.

Pull the outside leaves off of the cabbage and set aside a couple of clean, big ones. You may use almost any type of cabbage or vegetable for fermentation. Slice the cabbage as thin as you like and place into your bowl. Add two teaspoons of Real Salt or sea salt, that prevents the growth of pathogenic bacteria, and begin messaging. Your hands will get a great workout and as the seconds pass you will notice the bowl begin to fill with cabbage juice as it releases its water.

After a matter of only a few minutes, your work in the bowl will be complete. Begin to fill your jar with the cabbage packing it down every inch or two to ensure the removal of all air until close to the top. At this point place a leaf or two over the top of the shreds and ensure that the jar is filled to the top with its juices or add clean salted spring water or fresh celery juice until full.

Now it is only a matter of allowing nature to work its magic. You have created the environment suitable for fermentation; it just needs to be given three to four days without any sunlight in a steady 70-80 degrees Fahrenheit world to thrive.

Open your jar and smell the tang of fermentation, enjoy the fruits of your labor and then refrigerate the rest to slow down the process and enjoy as you will. As long as the brine stays above the cabbage, it will keep for a very long time in there. Should not be a concern because once you start enjoying it it likely won’t last too long.

Grown Meats

Looking at a recent poll showed that while Baby Boomers who lived the vegan lifestyle was at 2 % Generation X was at 5% and millennials were at 12%, proving that fewer and fewer Americans are consuming animal flesh, animal products, and by-products.

In addition to not eating animals vegans do not use leather for their shoes, jackets, purses, etc. nor do they use any soap, makeup, cleaning product, or item derived from or tested on animals or bugs including honey, wool, down, and silk, etc. It is most often from a compassionate standpoint, while for others it is for the health benefits or both.

As for what vegans eat, I would like to focus today’s blog on two straightforward unprocessed meat alternatives. Go to a place like Trader Joe’s and investigate all the faux meat options they have, it may surprise you. I want to cover two alternatives that you can prepare at home from its natural state and enjoy without too much effort.

Jackfruit is an amazing alternative, grown throughout India and Thailand and the trees grow large with a canopy full of fruit. The fruit itself can range in weight from 35 to 80 pounds. They can be purchased smaller and whole at an Asian market or in the can at those same markets, and they are beginning to carry it at regular grocery stores as well in the can. Ideally get it packed in water or brine. Drain water and slice up the fruit to behave much like a pulled meat and add to any sauce or recipe. Investigate the thousands of recipes online and enjoy!

Mushrooms are also a great alternative, and they can be portabellas, button mushrooms, and my new favorite is oyster mushrooms. They can be smoked and added to a BBQ sauce or sautéed and treated like meat in your favorite dish. From Indian food, BBQ, and Mexican food they’re my favorite meat replacement. Online find hundreds of recipes for a mushroom-based meal.

At the healthy grocery store, you will find dozens of options for alternatives made from processed soybeans like tofu and less processed soybeans making Tempe and from wheat gluten many types of Seitan are available and tasty. Do a Google search, and you will find a myriad of meat-free alternatives.

When I first wrote Nutritional Truths almost two years ago, I was still eating meat but knew the day would come when I would not. It has been over six months ago now since I gave up eating animals and I have not missed it a bit nor do I miss all the internal conflict that had been growing over the past couple years.

Doggone Dreams!

I awoke from my dream earlier this week and thought “What the *#%$?” In it, I had just learned that the large golden-colored dog I had sent for processing was ready to be picked up. Yes, processing, as in meat processor. I had sent a sweet dog to slaughter, WTH? Why in the world would I dream of such a horrible thing? I felt sick to my stomach as the thought of doing such a thing began to sink in.

While eleven other countries eat dogs the same as we eat pigs and chickens at some point, America decided that they were pets and not food. We got that part right.
I have had a dog for the first time in my life now for just about a year, and she is the main reason for my shifting perception around consuming animals and the main reason I no longer can eat cows, chickens, lambs or pigs.

As humans, we do not require animal flesh to survive, and no we are not carnivores it is a survival thing and now for generations, it has become a cultural thing. We are raised believing we need to consume animal flesh and dairy, to survive, and both are lies perpetuated by profits.

I will be expounding upon this further over the coming weeks and look forward to sharing more insights into our nutritional requirements and how we have been sold a bill of goods when it comes to eating meat. Funny I just used the industry standard term for what should be called flesh or muscle.

While my dog’s hind legs reminded me so much of a pig’s rear legs, I am grateful that is so as that is what finally brought me to this point. Once I stopped eating cows, pigs, lambs and chickens my relationship with them changed, and I no longer have an internal conflict around it. Plus the health benefits from removing animal flesh from the diet are undeniable and besides heart attacks and cancer can be killers, so a double win there.

There was a time not too long ago when I couldn’t imagine eating a meal without meat so if you’re a meat ten times a day person I understand. If you’re a dairy all day girl and love it I understand. My sharing this information is only to share my experience since it is all so new to me.

Freedom Through Forgiveness

Maybe they spoke cruelly to you or caused any level of physical or emotional pain. Perhaps you were on the receiving end of abuse of any and every kind. Maybe the pain comes from one or many omissions of affection, love, security, acknowledgement, kindness, or maybe their failure to forgive you.

Making it to the point you have in your life experiences of all kinds have you had, and some of them stick with us for a lifetime both the “good” and the “bad”. Other than perhaps while drinking, drugging, sexing, shopping, eating, working, etc. the memories remain and sometimes so do the feelings.

We are allowed to forgive those who have wronged us no matter the level of their interaction with us. The action of forgiveness in no way excuses the behaviours of the person/s but rather frees you from being tethered to them in an unhealthy fashion mentally and emotionally.

If you are holding onto a resentment or many of them against people or institutions consider how freeing it will finally be to release them with love or at least no more hate, anger, or resentment. Have as many resentments as you wish, but they will never serve you.

Anytime you have forgiven, and that same resentment pops back into your mind, this is normal, give them to God or the universe in words or thoughts and remind yourself that you have already released them for good. You are welcome to remain victimized, and that is your right. However, it will never serve you as well as being empowered and moving forward untethered to the pains of old.

May love be in abundance in your life, may you forgive yourself as well in allowing yourself to move forward from this day. Sometimes charity starts at home and who are we not to forgive ourselves. Enjoy your weekend and Be Well!

Avoid poisoning your dog.

If you are a dog owner, then you understand the unlimited love that dwells inside each and every dog. This week we celebrate the first birthday of our critter Paisley, and we could not be happier. When we invite a dog into our lives, we are quietly entering a commitment to care for and love our friend to the best of our ability for all of their days, as it should be.

Be sure not to repay their love by ensuring their demise via cancer. Like with humans, most everything we place on our skin ends up inside us traveling through the bloodstream. So if you spray your lawn with pesticides or herbicides or especially if you have a professional service do it then you are very likely poisoning your dog. Do right by your pooch and stop dosing them with toxins, if you have been. The same also applies to outdoor kitties.

If you live in an apartment or condo then find out what toxins are applied to the grass they walk upon at your complex and/or the park because your dog is taking it in transdermally through the pads of their feet, inhalation, and from licking anything that has been sprayed or licking it off of themselves.

Study after study has shown increased cancer rates as much as 70 percent of dogs exposed to those pesticides and herbicides. And it can also come from neighboring lawns or parks up to 50 feet away. If your best friend is over fifty pounds, they are at the highest risk of all.

What you feed your four-legged friends should be species specific and without grains or fillers. The basis of good health for them as for us is within proper nutrition, water and avoiding exposure to toxins.

To better care for your canine friend don’t use pesticides or herbicides on your lawn and make sure your neighbor is not using toxic chemicals that may easily be a risk to your pets. Consider removing the threat altogether by keeping them from grass that may contain such toxins. Bathe your pup or give them a good foot soak if they get exposed to treated grass.

There are several options for lawn care that won’t harm your pet just look for organic solutions and further push synthetics out of you and your pets world for a healthier longer life. Investigate further online and share this blog with everyone who loves their pooch.

Johnson & Johnson once again found guilty and ordered to pay $55 million.

For the second time this year Jonson & Johnson has lost a lawsuit for ovarian cancer linked to their talcum powder and were ordered to pay $55 million to the victim.

I wrote about this over two months ago and have included it once again below so you may know the truths about the dangers from using anything containing talc on yourself or someone you love.

If cancer is something, you wish for you and those around you to avoid you should know the following. Since the late nineteenth century, Johnson and Johnson has been selling talcum powder or what you may know as baby powder and as it turns out, it can be a killer.

This week the US state of Missouri has awarded seventy-two million dollars to the family of a woman whose death was tied directly to her use of their baby powder. Their mouthpiece claimed their products are safe and deny any issue. The issue lies in both their Baby Powder and Shower to Shower products.

As it turns out, talcum powder used on a woman’s genital area can migrate all the way into the ovaries eliciting an inflammatory response and subsequent cancer. Particles of talc have shown up in the cancerous tissues removed from ovaries. More than 20 epidemiologic studies support a link between talcum powder use in the genital area and ovarian cancer.

The issue with baby powder linked to cancer goes back to 1971 when the Henderson study showed talcum powder embedded deeply within cancer tissue. More studies were held in the eighties when a Harvard doctor Daniel Kramer MD found a 92% increased risk of ovarian cancer for women using talcum powder on their genital area. In 1982, J&J challenged him about the study and he asked them to remove talcum from their products, they refused.

The FDA was petitioned in 1994 by the Cancer Prevention Coalition to add a warning label to talcum products. The FDA responded by saying they did not have the resources to look into it and even if they did it is not a priority for them. Interesting to note that the same individual that wrote that letter went to work for the lobbying group that represents J&J. This type of behavior is common practice within government agencies including the FDA.

Even wackier is the fact that OSHA has required the mining companies to post a materials safety data sheet to each container of talc sent to J&J warning of the risk of ovarian cancer with its use. One steps further into the you-have-got-to-be-kidding-me section, and you’ll find that they are already using a possible replacement, cornstarch, in other products. However I would imagine it is laden with Glyphosate from it being GMO, so I would never recommend it.

I covered the dangers of talcum powder in Chapter five of my book Nutritional Truths, and this case is still ongoing. When it comes to the heat of summer, the use and availability of water can be of concern. If you have a lawn, you’re watering it, and if you’re a farmer, you’re well aware how little will grow without it. In our area as in many this mid summer, there has been no shortage of it. When it comes to what we eat water plays a big role there as well. Even though we likely never consider it.

When it comes to water conservation, we rarely think of how our food choices impact water use. For every gallon of cow’s milk we drink it takes 1000 gallons of water to produce it. For every pound of hamburger meat or boneless steak we consume it takes nearly 1900 gallons of water. For chicken fans, it takes 520 gallons of water to produce a single pound of boneless chicken.

On the other side of the food isle are vegetables and fruit with water requirements a bit lower. A pound of broccoli takes 34 gallons of water to produce; tomatoes take 26 gallons, potatoes take 34 gallons while citrus takes 67 gallons of water. Fruit and vegetables that are grown hydroponically take much less.

When you’re eating something you enjoy this weekend be aware of all the water it takes to produce it. Consider investigating online for the water it takes grow your favorite foods and become aware of your H two O footprint at each meal. Healthy Perception

On my way out of town recently I received a call from the property I was staying at asking me what kind of snack I would enjoy. I suggested something healthy like a piece of fruit, water, nuts, etc. When I made it to my room, a gift bag awaited me with a snack. In the note she hopes I enjoy my “healthier” snack.

While I appreciate the companies attempt at doing something nice for a customer they have a bit to learn around nutrition. Artificial flavors, high fructose corn syrup, GMOs, MSG, fried in oil, artificial colors and a few unknowns make up this clump of “healthier” snacks. If I were to serve you these snacks it would be because I did not like you.

I laughed and laughed having it confirm for me once again that many folks perceptions of healthy was nowhere in line with what is. Root beer, BBQ potato chips, and fruit chews don’t quite hit the mark but am guessing the word fruit made her think healthy.

At one time, I too might have thought of anything having the word fruit in it as being healthier. When traveling if one hasn’t brought their own stash of sprouted and raw nuts, fruit, veggies, etc. then it can be hard to grab something healthy if not nearly impossible. At least today most gas stations and convenience stores now carry bananas and some assortment of nuts/seeds and water.

Being on the Rebound Increases Fluidity

Most of my life I was oblivious to the work of and overall life supporting purpose of the lymphatic system. Its main function is to transport lymph, a clear fluid containing white blood cells that supports the body in ridding itself of toxins, waste and other undesirable matter. It consists of lymph nodes, vessels and lymph. Your spleen, tonsils, adenoids, and thymus are all part of this system. We have twice as much lymph fluid as we do blood.

As bacteria are identified in the lymph, the lymph nodes make extra white blood cells, which can cause swelling. If you have ever felt kind of sickish and felt the nodes in your neck to be swollen, that’s what is taking place. Lymph does not flow and circulate through the body as blood does; it has its own system and goes in only one direction, towards our neck.

Since the network of the lymphatic system does not have muscles and it flows in only one direction, the only way to actually move the fluid is through massage or movement. Many massage therapists offer lymphatic massage and you can easily do it yourself at home. It only requires a very light touch as most of the system is right under the surface of the skin.

The best way to move lymph fluid throughout the body so it may bathe every cell in nutrients and take all the waste away is to use a rebounder or small therapeutic trampoline. The lymph is completely dependent on physical exercise to move and since the network of vessels run up the legs, torso, and arms, the vertical up and down motion of rebounding is most effective at making the lymph flow effectively!

The movement created by jumping on a rebounder stimulates the system, allowing the lymph to flow freely to support the removal of toxins and dead or cancerous cells, heavy metals, infectious viruses, and all the other waste cast off by our cells. It can be more effective an exercise than cycling, running or jogging with much less impact and opportunity for injury. It also works more body muscles and your core, and maintains balance while jumping. NASA found it more effective and health affirming than running on a treadmill.

There are a dozen or more different rebounder manufacturers and you get what you pay for. The top of the line rebounders use bungee cords and make no noise when in use, whereas some of the spring ones do make a bit of noise, some much more than others.
